Diabetic Gluten-free Dessert Recipes

Gluten is a protein without starch, comprising glutenin and gliadin proteins. A diet free of this protein excludes ingredients derived from gluten-containing cereals, like wheat, rye, barley, triticale, and oats. Simple Flourless Chocolate Cake

Ingredients

  • ½ cup unsweetened cocoa powder
  • ¾ cup packed light brown sugar
  • 3 large eggs
  • 2 cups whole almonds
  • ½ cup boiling water
  • ⅓ cup unsalted butter or buttery spread
  • ½ tsp salt
  • 2 tbsp powdered sugar for dusting
  • 1 tbsp pure vanilla extract

Preparation: Preheat the oven to 350°F, and place a rack in the middle of it. Line the bottom of a springform pan with parchment paper or wax paper. Grease it and set aside. Dissolve the cocoa powder in boiling water, and finely grind the almonds in a food processor. Now, add the eggs, butter, brown sugar, vanilla, and salt; process for 30 to 40 seconds. Transfer this batter to the greased pan. Bake for 40 to 45 minutes, and then, let it cool in the pan for 15 minutes. Discard paper liner and dust with powdered sugar before serving.

Crisp Buttery Pie Crust

Ingredients

  • 1 tsp Amaranth flour
  • ¼ tsp ground ginger
  • 1¼ cups canned pumpkin
  • 2 lightly beaten large eggs
  • ¾ cup sugar
  • 1 cup evaporated canned milk
  • ½ tsp vanilla
  • 1 (9 inch) unbaked gluten-free pie crust
  • 2 tbsp water
  • ½ tsp salt
  • 1 tsp cinnamon
  • Heavy whipping cream for garnish (optional)

Preparation: Preheat the oven to 400°F. In a large mixing bowl, mix all ingredients for the pie filling. Beat for 1-2 minutes or until the mixture smoothens. On a baking sheet, place the unbaked gluten-free pie crust and pour the filling mixture into it. Bake for 45-50 minutes or until a toothpick inserted in the pie comes out clean. Allow it to cool and garnish with fresh whipped cream or dust with cinnamon sugar.

Gluten-free Double Chocolate Brownies

Ingredients

  • 6 (1 oz) squares semisweet chocolate
  • 12 oz semisweet chocolate mini morsels, divided into 2 (6 oz) portions
  • 1 cup gluten-free flour
  • ½ tsp xanthan gum
  • 1 pound (4 sticks) butter
  • 1 ½ cups chopped walnuts
  • 1 cup granulated sugar
  • 2 tbsp vanilla extract
  • 1 cup brown sugar
  • 6 eggs
  • 1 tsp salt

Preparation: Preheat the oven to 350°F, and grease a 12 x 18 inch cake pan with oil or butter. Mix the eggs, sugar, and vanilla extract in a large bowl. Take a double boiler and melt half the chocolate morsels, chocolate squares, and butter. Add the eggs and sugar mixture to it. Sift the gluten-free flour, salt, and xanthan gum, and stir into the mixture. Now, add the remaining chocolate morsels and walnuts to it; mix well. Spoon the batter onto the prepared pan and bake for 30 minutes. Let it cool and cut into squares before serving.
